These are delicious homemade cookies that taste like bakery cookies. I believe it has something to do with the high quantity of lard-like ingredients that allow the cookie to basically fry on the cookie sheet. They may not be healthy, but they can't be beat and tomorrow, I am bringing them as the snack for our Mom's group. Thanks to my MN friend, P, who introduced me to these cookies when our families were stationed together in Europe.
Good Everyday Cookies
1c. sugar 1c. oatmeal
1c. brown sugar 1/2 c. nuts
1c. butter 3 1/2 c. flour
1c. oil 1 egg
1 tsp. vanilla 1 tsp. salt
1 c. Rice Krispies 1 tsp. baking soda
1 tsp. cream of tartar
Blend sugars, oil, egg and vanilla. Beat well so oil does not separate. Add dry ingredients, stir in nuts. Chill at least 1/2 hour. Form into balls and flatten with glass dipped in sugar. Bake at 350F for 10-12 mins.
Variation: 2 tsps. vanilla and 1/2 tsp. coconut flavoring. Substitute 1 c. coconut for the nuts and add one 6-oz package of chocolate chips.
They may not get our court answer any faster, but we'll snack happy while we wait.

Reload, reload, crunch, crunch, say an Our Father... Actually today we are making Gumbo and cornbread for friends so I'll be eating that instead. I hope my stomach is over that bug from this weekend!
