It's A Soup-Tacular!

is hosting a "Soup-tacular". You can visit her for all sorts of warm and wonderful soup recipes shared by her readers. With a freezing-rain advisory for tonight, on top of the 8 or so inches of snow we already have, soup's sounding like a good bet around here this weekend.

Here's an easy favorite on the Ark that can be done in the crock-pot and serves up nicely with cornbread.

Mexican Soup
2 cans black beans, drained
1 jar salsa, 15 oz.
1-10 oz. pkg. frozen corn
1-15 oz. can chicken broth

Put all ingredients in crock-pot. Heat. Serve with shredded cheddar cheese. I usually double for our crowd. Enjoy!

mmmmmmmmm. The mexican soup sounds delicious Jane. It isn't really soup weathere here at the moment though.I am going to put it in my recipe folder though.
